Turtle Brownie Bottom Ice Cream Cups

  I have been fortunate enough to get my hands on Little Debbie’s latest creation…Turtle Brownies! Have you guys come across them in stores?  Little Debbie Turtle Brownies are incredibly delectable and dreamy, which is probably why they are considered their “specialty recipe”. Turtle Brownies are pan-baked and topped with salty, golden brown caramel, roasted peanuts, and drizzled with a fudge topping.     It has been so hot already in Florida, like ridiculously, can’t breath or stand to be outside for more than 10 minutes hot! The instant I tasted a Little Debbie Turtle Brownie, I knew I was going to combine that rich, brownie goodness with some cold and creamy ice cream. You simply cannot go wrong with a brownie, caramel, and vanilla ice cream combination.     In my usual “make it easy” mommy mode, I decided to layer Little Debbie Turtle Brownies with vanilla bean ice cream in individual, cupcake liners.  These little, ice cream cups make for great portion control and clean-up! This recipe is very enticing and a cinch to make. I let my girls get messy while eating their Turtle Brownie Bottom Ice Cream Cups, but obviously feel free to use a fork! Sometimes, messy just tastes better 🙂       Turtle Brownie Bottom Ice Cream Cups Yields 8 servings     Ingredients: 1 box of 8 Little Debbie Turtle Brownies 1 half gallon of favorite vanilla ice cream 1 jar of caramel sundae topping 1/3 cup chopped roasted and salted peanuts 8 extra large paper cupcake liners (I use extra large to make plenty of room for ice cream scoop and toppings). 1 cupcake pan 4 tbsp. (1/4 cup) ice cream scooper, optional.     Directions: Line cupcake pan with extra large, paper cupcake liners. Unwrap all 8 Little Debbie Turtle Brownies and place in each paper liner. Be sure caramel/peanut side is facing upwards.     Allow ice cream to sit on counter a bit to soften up, which will make scooping, and spreading easier. Scoop about 4 tbsp. of vanilla ice cream on top of each Turtle Brownie. Gently smash and try to smooth ice cream out evenly.     Be sure all edges of Turtle Brownies are covered...
