I am so excited to share that I have partnered up with HOOD Calorie Countdown! I absolutely LOVE HOOD Dairy products, especially Calorie Countdown. As many of you know, I struggle with diet-controlled diabetes. I was so happy when I discovered this amazing low-carb and low calorie dairy product!

My family has made a huge, life transition to a 40-acre farm. In our new lifestyle, I am trying to incorporate more farm-to-table meals and desserts. My daughters are huge muffin fans, especially for a tender, chocolate muffin. I challenged myself to create a lower calorie/lower sugar Double Chocolate Muffin recipe by substituting buttermilk and whole chocolate milk with HOOD Calorie Countdown 2% Reduced Fat Chocolate. The unknowing taste-testers, my daughters, had NO knowledge of the changes I made to my originally famous Double Chocolate Muffins…which can only mean complete success. So, get your shopping lists ready and head to Walmart, where you can purchase HOOD Calorie Countdown Dairy Beverage and start baking!




HOOD Calorie Countdown Double Chocolate Muffins



½ cup unsalted butter, softened

¾ cup sugar

2 eggs

¼ cup dark cocoa powder

1 teaspoon pure vanilla extract

1 cup HOOD Calorie Countdown 2% Reduced Fat Chocolate

1 ¼ cups all purpose flour

2 teaspoons baking powder

½ teaspoon salt

½ cup mini chocolate chips






  1. Preheat oven to 400 degrees and line a muffin tin with paper liners.
  2. In a dry ingredients bowl, sift flour, baking powder, and salt. Set aside.
  3. In a mixer, beat butter for 5 minutes, until it is light in color and fluffy.
  4. Add in sugar and beat another 2-4 minutes. Scrap sides intermittently.
  5. Mix in dark cocoa powder until well incorporated.
  6. Follow with eggs, one at a time and vanilla.
  7. Alternate adding dry, sifted ingredients with HOOD Calorie Countdown Chocolate.
  8. Do not beat on high, leave on lowest setting and scrap sides to be sure all is mixed.
  9. Finally, fold in mini chocolate chips by hand.
  10. Scoop equal amounts about ½ of the way full in paper liners.
  11. Bake 400 degrees about 8-10 minutes or until the centers are done and bounce back when poked.
